This dark yellow bubbly has a beautifully toasty nose accompanied by essences of white chocolate, nectarine peel and heather. Hay, dried morel mushroom and peach nectarine unwind in the glass with air. Bright acidity lights up the medium-bodied palate. The solid layer of bubbles gives the wine a slightly tugging texture, well-suited to accompany mid-weight dishes like risotto and light pastry-driven canapés. Drink now–2021.
