Cabernet Sauvignon (Barossa)

Boisterous on the nose, this smells of spiced black plums, balsamic and dried meat. Firm, dry and a touch austere, the high-toned acidity takes center stage on the palate. The tannins are compact but nicely ripe. Flavors of beef bouillon, dried blackberries and hard spice coat the full-bodied palate. This is rather ungiving now and would benefit from a hearty double decanting. The concentrated, minerally and lingering finish takes this wine out on a high note. Drink now–2025.
