Pet Nats that graduate beyond being fresh and fruity and take on yeasty elements are rare, but this dry wine has accomplished that. Lemon in color, it offers a nose of brioche, toast, golden apple and dried white blossom. The wine has pleasing acidity, with a just-baked, bread-dough finish.
