Pale yellow, with a large watery rim and itty, bitty bubbles, there’s a light yeastiness to this wine’s nose, along with notes of straw, salted almonds and spring flowers. Though small in appearance, the bubbles seem to expand a bit on the palate, creating a light foaminess. There’s still plenty of finesse here, both in structure and in flavor. The fresh acidity transforms the carbon dioxide into a mild and fun, spa-like, tongue-scrubbing cleanser. The wine’s medium-minus concentration offers a modest but pleasant finish. This is a pure, fresh and utterly delicious sparkler, best enjoyed through 2016.
